A recent profile in the Chronicle of our “sommelier” general manager Jim Warren by wine writer Patrick J. Comiskey had to say this about Insalata’s food: “Heidi Krahling’s cuisine has Italy at its roots. But Italy is only a jumping-off point to the rest of the Mediterranean Basin, especially the far reaches west and south: Sardinia, Southern Spain, and especially North Africa. It’s just as likely that you’ll find tagines and charmoulas on her menu as penne rigates and insalata mista. Krahling does it all with ease. It would be hard to surpass enjoying the cuisines of the Mediterranean southern shores at Insalata’s.”

He went on to say that “the prevailing theme of the food is bold and rustic; generous flavors with earth-toned spices like cumin and coriander, and Jim Warren’s wine list projects a kind of supple, elastic quality to match these immediate flavors.”

Jim’s idea is to meet the spice of the food head on with wines that are bold with forward fruit and spice and have some versatility. The wine list includes wines from the entire Mediterranean region, from Gibraltar to Beirut and a current favorite on the list is the 2002 Condado de Haza from Spain, a rustic earthy tempranillo with concentrated dark fruit, which marries well with the food.

An exciting wine by the glass as the 2003 Solorosa rose from California. It is a wonderful dry wine with good fruit and depth of flavor that is so versatile that it can compliment both salads and grilled meats.

The fun is to experiment with Jim’s list that has so many ways to match the exotic flavors that Heidi’s food offers.
